Vivienne Howard’s Career

In 2004 Howard received his degree from the Institute of Culinary Education in NYC. She trained as Chef de Partie at Jean-Georges Vongerichten’s Spice Market after interning at Wylie Dufresne’s wd~50.

After getting married to Ben Knight, a coworker from Voyage, Howard started a soup delivery business from their flat in Harlem, freezing soup in the bathtub. The pair agreed to purchase a restaurant in Kinston from Howard’s parents rather than launching one in New York.

After Howard and Knight relocated to North Carolina in 2005, Chef & the Farmer made their debut in a mule barn and downtown print shop in 2006. Nearly ninety kilometers separate the restaurant’s ingredients, which make up over 60%.

Her family’s Eastern North Carolina community inspires the restaurant’s sophisticated southern meals. Howard said in 2018:

“Our elders taught me simple things. I appreciate A Chef’s Life but despise modern media since it’s young-person, new-ideas driven, and doesn’t use older people’s wisdom. Learning from and sharing with them is great.”

In 2012, The Chef & the Farmer caught fire and underwent reconstruction. In the summer of 2022, Chef & the Farmer closed to reopen under a new name. Constructed in 2013 by Howard and Knight, the Boiler Room served burgers and oysters across from Chef & the Farmer until May 2020.

Howard’s cookbook and memoir Deep Run Roots – Stories and Recipes from my Corner of the South (ISBN 03163811101) was released in October 2016. For three weeks, the book was a New York Times bestseller.

In 2017, the book won four IACP Cookbook Awards: Outstanding Restaurant Cookbook, Julia Child First Book Award, Cookbook of the Year, and Outstanding General Cookbook.

In Wilmington’s Warehouse District, Howard and Knight opened Benny’s Big Time Pizzeria for business on December 12, 2017. 2020 saw the release of Howard’s second cookbook, This Will Make It Taste Good: A New Path to Simple Cooking.

The cookbook’s recipes all start with flavorful bases. In the South, she began penning a Garden & Gun column. In 2021, Handy + Hot, a sister café, opened alongside Lenoir, Howard’s original Charleston restaurant.
